USDA Processed Lamb

Valley Brook Farm is licensed and inspected by the state of Vermont to provide great tasting USDA processed lamb. Our lamb is primarily grass fed, during the winter months we do supplement with hay a pellet to balance out hay quality. Our lambs are raised here on our family's farm, these lambs are well cared for and receive the highest quality care we can provide them. They receive routine hoof maintenance, and regular parasite control through natural methods. Lambs are grazed naturally through the summer months, they are rotated onto pastures and always have access to shelter. These are not feed lot lambs. Most of our lambs are cared for and handled by 4-H members in the sheep project. Our lamb has a very mild sweet flavor.

We hear all the time, " I would love to try lamb but I'm not sure how to cook it!" Lamb can be prepared with the same methods used for pork or beef. Rack, Loin and ribs are great for grilling, broiling, and roasting. Shoulder, Shank & Rib  are great for Braising and stewing. Ground lamb is very versatile and can be used in the same manner as ground pork or beef. (See Lamb FAQs and recipes at the bottom of this page.)

                                                                                          True Shepherds Pie

What you will need:

1 pound ground lamb                                                                          10 Medium potatoes

1 pound lamb/mutton sausage(whatever flavor you like)                1 Can Cream Style Corn

1 small can mushrooms(optional)                                                      1 Can whole Kernel corn

1 Green Pepper (Optional)                                                                   1 Onion (Optional)

1 4oz package shredded cheese(Any flavor)                                     1 can/jar beef gravy (keeps dish moist)


You can change ingredients as desired. We really enjoy mushrooms, peppers and onions in this dish but it is equally good without them. If you do not have lamb sausage, any sausage will do. If you can only find sausage in casings Simply remove the casings and break apart when cooking.


Peel and boil potatoes.

Brown Sausage and ground lamb, drain and place in 13x9 baking pan.

Spread Beef gravy over sausage mixture.

Brown peppers & onions sprinkle on the sausage mixture.

Open mushrooms & drain. Sprinkle on the sausage mixture.

Open cans of corn drain whole kernel. Spread on top of mushrooms.

Spread shredded cheese over corn.

Prepare potatoes mashed however you prefer, and spread them over the cheese.

Now bake at 350 degrees for 15-20 minutes or until heated through. (Will vary by oven.)

2 pounds Lamb Stew Meat                                         Potatoes

Baby Carrots (cut up)                                                  Cabbage

1 Can whole kernel corn                                              Other vegetables can be added if desired


Combine ingredients in crock pot with beef stock and simmer until done. Add corn 15 minutes before serving. You can add as much or as little to this stew as you like. You are only limited by your imagination.
